This is the first time I’ve heard of the Curry Guy, Dan Toombs. Not only is his website incredibly helpful, but the multitude of cookbooks he has written is a godsend!

Like I said above, these are all low carb, low fat, low salt, etc. recipes! Indian food is all about flavor, so Dan Toombs has made sure that was maintained while concocting these dishes. There are over 100 delightful recipes to choose from. From starters and snacks to authentic Indian dishes, curry, and bbq! The recipes in The Curry Guy Light: Over 100 lighter, fresher Indian curry classics! cookbook are under 350 calories for each serving – that seems almost impossible.
I really enjoy his introduction as to why he decided to even produce a cookbook that was exclusively “light” recipes. The short version is he wanted to provide a fantastic tasting meal for his friends who are knowingly diabetic and vegetarian – his friends even starved themselves to save all the calories for his elaborate dinner. Now, they don’t have to.
Many dishes can be made effortlessly and with very few ingredients. Admittedly, many of these dishes take a lot of time to prepare, but most Indian food does. If you’re lacking a pressure cooker, some curries can take many hours to prepare. There can be a lot of prep time for some of these dishes, but rest assured it is well worth it.
What immediately made me happy are the large beautiful photos throughout this cookbook. Everything, and I mean everything, is a head-turner. The Curry Guy Light: Over 100 lighter, fresher Indian curry classics! really showcases each dish and entices us to want to try it.
Indian food is fantastic for a lot of people with dietary needs, because it can easily be made gluten free and vegan. In fact, Dan Toombs does a wonderful job labeling each recipe, but most are authentically free of animal products and gluten. Most dishes can easily be substituted out for whatever you need.
