I’m sure you’re wondering how I am still obsessing over pie – especially after Thanksgiving? Frankly, I do have quite a few pie-oriented cookbooks, so why do I keep looking? I, personally, think pies are a perfect food creation. They’re portable, multifaceted in flavor, and constantly evolving. Pies have been around forever (since the Ancient Greeks!) and I don’t see them going away any time soon. The reason is because we are constantly modifying them to fit in with the times!
