Cookbook Preview: Bright Recipes for the Modern Palate

Let’s take a look at the new cookbook coming out in Summer 2024 from Chronicle Books!

Here is “Bright Cooking: Recipes for the Modern Palate,” by Camille Becerra (June 25, 2024)

This is chef Camille Becerra’s first cookbook! She’s known for championing the “healthy chic” food movement.

Camille Becerra is the chef at As You Are Bakery in Brooklyn New York. She also runs Bright Cooking School, a Substack blog you can subscribe to.

Inside her new cookbook, we’ll find 140 plant-based recipes. Note that this isn’t a “vegetarian” cookbook as there are pescatarian recipes included. That’s ok, we vegetarians can just skip over those recipes or replace with plant based ingredients.

The book is split into two sections. The “Elements” section of the cookbook features 90 important foundational recipes for broths, sauces, finishing oils, etcetera. You can think of it as “The Pantry” section that many cookbooks begin with. The chapters include “Modern Mother Sauces;” “Sauces, Ferments and Cures;” “Stocks, Broths and Dashis;” “Flavor Pastes;” “Fruit Sauces and Tonics;” and “Finishings.”

The second section of the cookbook is “Dishes.” Chapters include “Fruit and Cereals,” “Baked,” “Snacks,” “Salads,” “Vegetables,” “Grains,” and “Seafoods.”
