If you are looking to learn vegan and vegetarian recipes from a Michelin-starred chef, you’ve come to the right place. The author, Rohit Ghai, is the first Indian chef to have won a Michelin star for UK’s leading Indian restaurants. Jamavar opened and within ten months Rohit Gai gained popularity.
The Tarkari: Vegetarian and Vegan Indian Dishes with Heart and Soul cookbook is Rohit Ghai’s first! He gifts us his expertise and skill throughout. He also has made Indian cooking approachable. I can’t wait to try some of his favorite dishes he grew up eating in Punjab, India.

Listed on the top of each recipe there is the yield, time to prepare, and chapter.
I do enjoy how easy everything seems to be. Many of the recipes take less than an hour to prepare! The ingredients are accessible as well.

The Mumbai Modern: Vegetarian Recipes Inspired by Indian Roots and California Cuisine cookbook looks very intriguing! Amisha Dodhia Gurbani combines Gujarati cuisine, Mumbai street food, and contemporary ingredients from her hometown in California to concoct amazing dishes.
All of these recipes are vegetarian-friendly! She gives us over 100 dishes to make throughout the year. These recipes are paired with amazing photography to showcase each dish.

I know I have said this before, but Indian food and Instant Pots are the perfect marriage. I feel this brings the most depth and flavor out in Indian cooking. I’m thrilled to peek through the Authentic Indian Cooking with Your Instant Pot: Classic and Innovative Recipes for the Home Cook cookbook.
The dishes are divided by main ingredient and protein, such as:

30 Minute Mowgli: Fast Easy Indian from the Mowgli Home Kitchen is a widely anticipated cookbook! Nisha Katona is well known for her curries in the UK. With this cookbook, she provides her best and favorite curries in 30 minutes or less!
All the recipes are meals that range from light lunches to large mains. All you need to do is pair them with one of the simple sides such as rice, noodles, potatoes, or a chapati wrap.
The chapters are themed around ingredients like chicken, meat, fish, vegetables, and desserts. There’s an additional chapter called “Ma, Look Away” for Nisha’s favorite pasta dishes! P
You’ll find recipes such as:
- Chicken Dhansak
- Gingerbread Lamb Steaks
- Gin and Tonic Salmon
- Million Dollar Green Dahl

These are very different than what I’ve seen in previous Indian cookbooks!
