As I look through some of the newer cookbooks for college students, my age is beginning to show. I never cared about eating healthy, including when I started to have stomach issues. Everything was always about convenience. To my surprise, many of these cookbooks are designed for health-conscious college kids. I am impressed! Let’s take a look.

I am usually suspicious if a cookbook says that items take 20 minutes or less to prepare. In addition, that the recipe is healthy and tastes good. Don’t get me wrong! I’ve managed to cook something like this before. It does feel very few and far between.
Regardless, the Super-Speedy College Cookbook: Healthy Recipes in 20 Minutes or Less will be the perfect accompaniment for your new college student.
I am in love with the introduction of this cookbook. Michelle Anderson breaks down cooking in general. This includes knife cuts, cooking lingo, and much more. This is a great cookbook for beginner chefs and college students alike.
The author goes over the cooking basics, and also the other necessities for college kids. She guides us on creating shopping lists to stay within a budget, speeding up cooking, and using ingredients you have on hand.
Truly, the dishes are simple and approachable for anyone. We have recipes for sandwiches, soups, and easy mains like Chicken Parm with Zucchini Noodles.
Hopefully the Super-Speedy College Cookbook: Healthy Recipes in 20 Minutes or Less will encourage our new college kids to eat better!

I am impressed with kids these days. My only concern with food as a teenager was if it tasted good. The vegan diet is becoming more and more prevalent as time moves forward. I’ll hand it to these teens for wanting to eat fewer animal products.

I enjoy that you don’t necessarily have to be vegan to benefit from this cookbook. Many of the recipes are veg-forward to help you ease into plant-based eating.
I am looking forward to the Oven Roasted Baked Potatoes and Thai-Style Peanut Chickpea Salad!
Moreover, I like that each recipe shows if it’s nut-free, gluten-free, soy-free, one-pot, and more. This is helpful for more than just vegan eaters! As someone who is gluten-free, this is a godsend. Lots of vegan recipes contain gluten, unfortunately. It will be easier to navigate with the indication marks.
