New This Week – the Southern Keto Cookbook

The Southern Keto Cookbook (via Amazon) is the only keto cookbook I’ve been interested this year. I’m vegetarian and don’t follow the keto diet, but I’m definitely interested in cutting out a lot of carbs. I’m super curious to see how they handle making waffles and Southern foods keto!

This cookbook includes several fried chicken recipes (which I’ll skip over as a vegetarian). They give you options for the coating including almond flour, coconut flour and buttermilk; plus a recipe for oven baked chicken and keto chicken tenders.

There are a whole bunch of Cajun recipes, including keto Cajun seasoning, keto cajun chicken pasta, Cajun cauliflower rice (now that sounds good!) and blackened salmon with Cajun zoodles.

The next chapter is on waffles – chocolate waffles, keto vegan pumpkin waffles, strawberry keto waffles, buffalo chicken waffles, etc.

Next, the book presents recipes for keto grits and biscuits – expect to see some coconut flour in recipes here.

The Lowcountry Recipes chapter teaches how to make keto country gravy, crab soup, summer tomato pie (swoon!) a shrimp frittata and keto dogs.

In the “Floribbean recipes” chapter, they present keto Jamaican Callaloo, Jamaican style brown chicken stew, recipes for Puerto Rican chicken, Jerk chicken salad and a few keto Cuban dishes.

I’m most intrigued by how they will pull off the keto Southern Dessert recipes – keto apple pie, chocolate cake, blackberry cobbler, brownies and keto churros!
